Warming Recipes For Winter

Ah good winter recipes we all love them! The sort of food that keeps you warm and is a bit comforting. Now that the rain and cold have struck you might be stuck for ideas of things to do? Why not get creative in the kitchen? Get your kitchen utensils at the ready as we have 3 delicious winter recipes for you to whip up!

Winter Veg Lasagne

  • Lasagne sheet
  • Quorn mince (or another vegetarian substitute)
  • Chopped tomato/bolognaise sauce
  • Cheese of your choice (we recommend mozzarella)
  • Half an onion
  • Salt
  • Pepper

Step 1. Dice the onion then cook the mince with diced onions in a frying pan (medium heat) with a tablespoon of oil, a pinch of salt & pepper & chilli powder (chilli is optional)

Step 2. Once the mince is fried add the chopped tomato/bolognaise sauce to the mince and begin to stir the mince and sauce together but be sure to turn down the temperature of the hob.

Step 3. Pre heat the oven to 180˚c. Leave the bolognaise to simmer stirring it from time to time. Whilst it’s simmering place the lasagne sheets in a greased dish

Step 4. Take the bolognaise off the hob and start layering up the lasagne. The layers should be in this order ‘sheet, bolognaise, cheese, then repeat from layer one.’

Step 5. Once you are happy with the layers add a good amount of cheese on top of your last layer which should be the sheet. Once your top layer is covered with cheese, pop it in the oven and bake for 30-40 minutes. Keep checking your lasagne as it can cook faster depending on the amount.

Step 6. Take out the oven, slice into appropriate portions and enjoy your scrummy lasagne!

Chunky Chilli Recipes

  • Garlic (crushed)
  • Half an onion
  • Red Wine
  • Tomato puree
  • Chopped tomato
  • Beef stock cube
  • Salt
  • Pepper
  • Beef mince
  • Oil

Step 1. Heat a saucepan with oil, diced onion and crushed garlic. Fry until the onion and garlic are sift then turn the heat down and add the beef mince. Cook until the mince is browned and break up the meat using a wooden spoon.

Step 2. Pour 250ml of wine into the saucepan and leave to boil for 2-3 minutes. Add in 3 tablespoons of tomato puree and the tin of chopped tomato in and begin to stir.

Step 3. Crumble stock cube in the saucepan and season with salt and pepper. Put the lid on the saucepan and leave to cook for 50 minutes to an hour.

Step 4. Add kidney beans into the mixture and allow to cook for an extra 10 minutes.

Step 5. Serve up and enjoy!

Chicken and rice casserole 

  • White Rice
  • Half an onion (Diced)
  • Can of cream of mushroom soup
  • Chicken stock cube
  • Chicken (shredded)
  • Salt
  • Pepper
  • Garlic (crushed)

Step 1. Preheat the oven to 350˚c and grease a baking dish with oil. Add the rice with the onion, cream of mushroom soup and crumble the chicken stock cube into the dish and stir. Season with salt and pepper.

Step 2. Add the shredded chicken into the mixture along with the crushed garlic.

Step 3. Cover dish in foil and bake for one hour. After it has cooked for an hour remove the foil and bake for a further 30 minutes. Before lifting out make sure that the rice and chicken are cooked.

Step 4. Serve up and enjoy your chicken and rice casserole.
